few, the rosa camuna (pink Camonica cheese), the Silter
and the goat cheeses which are becoming just as important
as those from cows. The salame, with all the pork by-products.
The oven products with the typical and matchless "Spongada".
The wine which, even if still undergoing an improvement
phase, is already obtaining significant results.
The territory is also rich in chestnut woods, producing
in autumn important fruits to be used both in pastry
shops for biscuits, cakes and other sweets and in the
kitchen to make a fresh, different dough or other creations,
depending on what mood the chef is in. The Camonica
Valley is also known for its varied types of honey (chestnut,
flower essences, acacia etc..), small fruits, officinal
herbs, vinegar, apple juices and liqueurs for all tastes
(liquorice, coffee, mugwort-flavoured, etc
) obtained
from the care and patience of the local people. For
both work and enjoyment, they long to pass on the once-used
methods to those who are passing through the Camonica
Valley, so that the visitors can savour incomparable
dishes, thus recalling the Valley in a positive manner.
In the various restaurants found along the road, visitors
can eat delicious foods cooked according to the old
tradition or innovative combinations of dishes yet prepared
with local ingredients. There is an ever increasing
amount of those famous events, generally organized in
summer, where it is possible to travel along programmed
routes, stopping in various points to try the typical
products. These are occasions when one can go on the
binge, strolling around!
